The sun is shining, the day is bright and the coconut trees are flowing their best nectars to make Nirasatria’s most popular sweetener product, Organic Pure Coconut Sugar. This coconut sugar has been pre-selected from the moment they were harvested through quality assessment of the liquid sap, and onto delicate cooking process that required skills and attention from the farmer in order to not lose their quality sap from overcooking or other mishandling. Quality and consistency, in every batch.

Nirasatria’s Organic Pure Coconut Sugar originates from the lush Javanese landscape of the Indonesian archipelago. It pays tribute to the region’s proud farming heritage and integrates this with modern standards of quality control. Our sugar produced from coconut palm blossoms, is a delicious and healthy alternative to cane sugar. It has a toffee like flavour, comes from all-natural organic ingredients, has been minimally processed, and has not been filtered.

How it’s made

Neera, the nectar sap of the coconut flower blossom is harvested two times a day by our coconut farmers. Farmers climb the coconut palms and collect the sugar blossom nectar by gently slicing the flower. Once harvested the nectar is transferred into kettles. The evaporation process lowers the moisture content of the nectar before it is allowed to set into a solid nectar “brick”. The nectar sap is then boiled down until they thicken and change colour from translucent to brown, then granulated by hand and further to specifications. See more about how it’s made below.

Common misconception

Coconut sugar is sometimes confused with Brown, Aren, or Arenga Sugar to the naked eye. Arenga sugar is another type of sweetener that derives from a different kind of palm tree (Arenga Pinnata) and yield a very distinctly different product. Arenga wears a much darker brown colour, sometimes appearing black-tinted (thus its common name in some places, ‘Black Sugar Palm’); coconut sugar owns a brown that ranges from bright yellow to reddish brown. In aroma, coconut sugar also displays caramel aroma notes not found in Arenga Sugar. The same caramel notes in sweetness is found in coconut sugar that are not found in Arenga sugar.
