Ingredients
For the pie crust:
- 350 grams of all-purpose flour

- 6-7 apples. Peeled, cored, and thinly sliced.
- 2 tablespoons all-purpose flour
- 150 grams of coconut sugar
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1/4 teaspoon ground nutmeg
- For assembly:
- 1 tablespoon coconut sugar
- 1 egg. Lightly beaten
Directions
Making the pie crust:
- Whisk 350 grams of all-purpose flour and 1/2 teaspoon salt in a large mixing bowl.
- Cut the cold butter into the mixture using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add 6-8 tablespoons ice-cold water gradually. Mixing until the dough comes together.
- Divide the dough in half, shape each half into a disc, wrap with plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 190°C (375°F).
- Making the apple filling:
- Combine the sliced apples, 2 tablespoons all-purpose flour, 150 grams of coconut sugar, 1/4 teaspoon salt, a teaspoon of ground cinnamon, a tablespoon of lemon juice, and 1/4 teaspoon of ground nutmeg in a large mixing bowl.
- Mix well, to ensure the apples are evenly coated.
- Heat the mixture in low heat until it is caramelized.
- Making the assembly:
- Remove the dough from the refrigerator. On a lightly floured surface, roll out one of the dough discs into a 12-inch circle, about 1/8-inch thick. Remove any excess dough hanging over the edges.
- Transfer it to a 9-inch pie dish carefully, gently pressing it into the bottom and sides.
- Pour the apple filling into the pie crust, spreading it evenly. Roll out the second dough disc, drape it over the apple filling, or create a lattice pattern. Cut and crimp the edges to seal. Cut a few slits in the top crust to let steam to escape.
- Brush the top crust with the beaten egg and sprinkle with coconut sugar.
- Bake the pie for 50-60 minutes until the crust is golden brown (If the edges of the pie start to brown too quickly, cover them with aluminum foil).
- Remove the pie from the oven. Let it cool on a wire rack before serving.
